Owner/Chef: Ian Just is a product of the prestigious École Superieure de Cuisine Française cooking school in Paris where he graduated at the top of his class. After graduation, he worked in the 2 star Michelin restaurant Michel Comby and at the famous brasserie, Aux Charpentier. He started working at Les Zygomates in "The City of Lights" (7 rue de Capri, 75012 Paris) soon after it opened and quickly became the Sous Chef under Chef/Owner Patrick Fray. He worked there nearly 3 years and then returned to Boston to cook at Maison Robert.

2008 will mark Ian's 14th year as owner of Les Zygomates. In 2004, he had the foresight to open another restaurant on South Street called Sorriso Trattoria. Specializing in traditional Italian cuisine, Sorriso's menu is complemented by an ecclectic beer menu along side a most delicious cocktail menu. Not unlike Les Zygomates, Sorriso promises to be a fixture on South Street for many years to come.

Chef: Connal McCullough is a graduate of the Culinary Institute of America and has been cooking in Boston for the past five years. At Les Zygomates, he interprets French bistro fare with seasonal New England product.

Sommelier: Geoffrey Fallon
Geoffrey Fallon has been the wine director at Les Zygomates for six years. He
has been the wine chair for Cooking for a Cause for three years. Les Zygomates
has won numerous awards for its wine program, including Wine Spectator Award
of Excellence (2003-2007), Boston Magazine, Improper Bostonian, Dig, etc.
He’s a regular luminary at the Nantucket Wine Festival and the Tanglewood
Wine and Food Classic. Geoffrey’s commitment to introducing people to
eclectic wines and their relationship with food is the driving force behind
his wine list and weekly "Tuesday Night Tastings."

 

General Manager: Melissa Thunberg is a graduate from Emerson College. She has been in the restaurant industry for the past 12 years and in event management for the last six. She has extensive experience in event planning ranging from rehearsal dinners to weddings to corporate functions.
